UK students favourite food to cook in 2023 revealed, with the recipes to match

This is a safe, secure, and fun space where students at iQ Accommodation and the students who live in their residences can share recipes that are perfect for student budgets, student lifestyles and are super easy to make. A great way to get into cooking lovely homemade meals that you can enjoy year-round.

To celebrate the end of term as we head into holiday season, the iQ Student Accommodation team has decided to share this year’s most popular recipes from their SupperClub for others to enjoy.

The top four most popular recipes shared on their SupperClub this year are detailed below.

Chicken Burgers and Potato wedges

Perfect for one person

Ingredients

1 Potato
Oil
Garlic and herb wedges spice mix (1/4 of packet)
1 egg
Southern fried breadcrumb mix
Chicken breasts
Salt
Paprika
Salad
Garnish and sauces of choice

Method
Chop the potato into wedge like shapes
Boil in water for around 10 minutes until they’re just about soft
Put them into a bowl with oil and wedges spice mix
Mix together and place on a baking tray
Place in the oven on 180 for 30 minutes
Beat an egg
In a separate bowl add southern fried breadcrumb mix
Beat the chicken to flatten it
Season chicken with salt and paprika on both sides
Dip the chicken into the egg mixture, let the excess drip off and dip into bread crumbs
Coat thoroughly and evenly on both sides
Place on baking tray
Repeat for each piece of chicken
Place in the oven for about 20 minutes
After 15 minutes of the wedges being in the oven, take them out to flip them
After 10-12 minutes take the chicken out and flip them
A few minutes before the wedges are done, put buns in, to lightly toast
Take the chicken out and check it’s cooked all the way through
Serve with a garnish and sauces of your choice

Chicken Enchiladas
Great for sharing with flat mates

Ingredients

2 chicken breasts
Oil
Red onion
Pepper
Cheddar cheese
Enchilada seasoning and paste (from enchilada kit)
Wraps
Avocado
Lime juice
Salt
Chilli flakes
Tortilla chips
Dips of choice

Method:

Chop up two chicken breasts
Heat some oil in a pan
Once heated, add the chicken
Chop up one red onion and one and a half peppers (and any other veg you want to add)
Once the chicken is cooked, add veg to the pan and mix
Whilst cooking, grate some cheese (you will need quite a bit)
Once the veg has cooked a bit, you can add the enchilada seasoning and paste
Give it all a good mix and add some boiling water until you get the desired consistency
Let this mixture cook for a couple more minutes
Add a couple of spoons of the mixture to the middle of your wrap in a line
Fold the sides up and over and place seam down in the tray
Put the remaining paste on top of the enchiladas in the pan
Sprinkle the cheese generously on top
Cook in a preheated oven at 180 for 20-25 minutes
While the enchiladas are in the oven, make guac:
Mash an avocado with a fork
Add juice of half a lime, salt, and chilli flakes
Mix together with a fork
Serve with some tortilla chips and dips of your choice

Crispy Chicken and Veg Pasta

Ingredients:
Onion
Pepper
Courgette
Chicken breast
Breadcrumbs
Salt
Paprika
Garlic powder
1 egg
Pasta
Passata
Cheddar cheese

Method:

Cut up the onion, pepper, and courgette
Beat an egg
Put some breadcrumbs into a separate bowl with garlic powder and paprika
Dip the chicken breast into the egg, and then evenly coat with breadcrumbs
Place the chicken onto a pan and into the oven at 180 for 20 – 25 minutes
Put all of the veg into a pan with some paprika and cook
Boil some water and cook the pasta
Add some passata into the pan with the veg
Once the chicken is cooked, cut it up into bite size pieces
Drain the pasta and put it into the pan with the veg
Put the cut up chicken into the pan with the veg and pasta
Mix everything up
Serve in a bowl and top with cheese

Vegetable Stir Fry
Easily adaptable recipe by adding prawns/tofu

Ingredients:
Half an onion
One pepper
Oil
Mangetout
(veggies of choice)
1 clove garlic
1 spoon honey
3 spoons sweet chilli
4 spoons dark soy sauce
Noodles

Sesame seeds
Prawn crackers

Method

Start by cutting up half an onion and a pepper
Heat up some oil in a pan
Add onion and pepper to the pan
Whilst that’s cooking, cut up some mangetout and mushrooms (this recipe is completely customisable, you can add whatever veggies you like)
Add all your other veggies of choice into the pan
Whilst the veggies are all cooking, make the sauce:
Add 1 clove of crushed garlic, 1 spoon of honey, 3 spoons of sweet chilli and 4 spoons of dark soy sauce to a bowl (chilli flakes optional)
Give it all a mix
Boil noodles in a pan of water for a few minutes
Once all the veg is cooked, add your sauce to the pan, and give it all a good mix
Leave the sauce to cook for a minute and then add your noodles
Stir together and add any extra sauce if you feel it needs it
Serve in a bowl with a sprinkle of sesame seeds and a side of prawn crackers
