Camp Coffee Valentine’s Heart Mocha Pancakes


Mocha Pancakes
220g self-raising flour
3 tablespoons sugar
60g cocoa powder
1/2 teaspoon salt
1 large egg
44ml unsalted butter (melted)
85g Camp Coffee
500g milk
Optional – chocolate chips

Coffee Glaze
210g icing sugar
2 tablespoons Camp Coffee
60g milk
Pinch of salt

1. Put the flour, cocoa powder, sugar, and salt in a large bowl and mix together.
2. Whisk together all the wet ingredients in a separate bowl – egg, butter, milk, and Camp Coffee.
3. Now mix the two sets of ingredients together and stir or whisk to combine well.
4. Heat a frying pan, adding a knob of butter or drop of vegetable oil to your pan.
5. Carefully place a heart-shaped mould into your frying pan and pour the batter into it for each pancake. Cook until bubbles appear (around 2 minutes) and flip.
6. Repeat until you finish the batter.
7. Keep pancakes warm while you make your coffee glaze by mixing Camp Coffee, icing sugar, milk, and pinch of salt.
8. Serve your heart shaped pancakes with the Camp Coffee glaze drizzled over the top.
9. Sprinkle some chocolate drops on top for a special treat!
