Mrs. Baker’s Blondies

I will be honest, I am seriously addicted to Nigellas Chocolate brownies – but these blondies make a welcome change. Completely delicious and, if you desire, can be made chocolate free.

Ingredients

115 grams butter, melted

215 grams light brown sugar

1 large egg

1 teaspoon madagascan vanilla extract

1/4 teaspoon rose pink rock salt

125 grams self raising flour

chopped nuts (handful)

almonds (handful)

dried red berry fruits (handful)

1 x pack white choc chips (optional)

Method

Pre-heat oven to 180 degrees centigrade.

Melt butter gently in a microwave or pan.

Line an 8″ x 8″metal baking pan with baking parchment

Stir in brown sugar, then add egg, vanilla extract and salt, stirring vigorously until blended.

Add self-raising flour and stir for several more minutes until the batter starts to thicken (the batter should pull away slightly from the sides of the bowl)

Fold in nuts, almonds and berry fruits.

Pour batter into the pan and spread to fill.

Bake for 25-30 minutes until edges start to brown but there is still some softness in the middle (blondies will continue to cook after being removed from the heat)

Place tray on a wire rack, allowing blondies to cool in the pan,

Slice into squares – and enjoy topped with good quality madagascan vanilla ice cream!
