Mrs Baker’s Classic Vanilla Fudge Recipe

This is my favourite fudge recipe, absolutely perfect to make as a gift  (although in our house it never lasts long!)

300ml single cream
350g sugar
100g butter
1 tsp vanilla extract

1 Put cream, sugar and butter in large pan and heat gently, stirring, to dissolve sugar.  We find an induction hob excellent because it gives excellent heat control.

2 Turn up heat and boil for 10-15 minutes, stirring frequently, until fudge reaches 115C.

3 Remove from heat, add vanilla extract and beat until it starts to thicken and lose shine (up to 5 minutes).

4 Pour into a baking tray lined with greaseproof paper.

5 Leave mix to cool completely at room temperature, cut into squares and enjoy.

Note: Not healthy for diabetics, as it’s really addictive!
