This is my favourite classic vanilla fudge recipe, absolutely perfect to make as a gift (although in our house it never lasts long!)
We tend to make this classic vanilla fudge for special occasions, it’s everything a good fudge should be – rich, creamy – and indulgent. So indulgent that we can’t make it as often as we would like, because our waistlines (and blood sugar levels) are high enough.
But when you need something you can make quickly, that is effortless, delicious and bound to impress, you won’t go wrong with this home made touch of deliciousness, bag it up, give it as wedding favours, gifts and treats for special occasions.

Classic Vanilla Fudge – Ingredients
300ml single cream
350g sugar
100g butter
1 tsp vanilla extract
Classic Vanilla Fudge – Method
The secret here is getting the temperature right, so you will need a sugar thermometer for this. Other than that, you need a pan, the ingredients and a baking tray with some greaseproof paper. This really is the easiest fudge you will ever make – and if you are like us, you will keep making it!
1 Put cream, sugar and butter in large pan and heat gently, stirring, to dissolve sugar. We find an induction hob excellent because it gives excellent heat control.
2 Turn up heat and boil for 10-15 minutes, stirring frequently, until fudge reaches 115C.
3 Remove from heat, add vanilla extract and beat until it starts to thicken and lose shine (up to 5 minutes).
4 Pour into a baking tray lined with greaseproof paper.
5 Leave mix to cool completely at room temperature, cut into squares and enjoy.
Note: Be warned – this stuff is all too easy to eat and eat plenty! Not healthy for diabetics, as it’s really addictive!
